When I want to add more vegetables into my diet, I love a simple layered meal.
After all the ginger snaps and paleo treats I've had during the holidays, adding some vegetables is probably a good idea!

We choose lean ground poultry, as it provides protein without the added fat, coconut flour which is richer in protein and fiber, and almond milk to keep this dairy-free. You can make a healthy dinner by adding all the vegetables.
INGREDIENTS
Let's get our ingredients together for the dish we're going to make today. You will need the following ingredients:
The Casserole
- 1 tbsp plus 1 tsp of olive oil, divided
- 1 lb 93% Lean Ground Chicken
- Half a cup of diced onion (about the size of a small yellow onion)
- 1/4 cup + 2 tbsp tomato paste
- Pepper
- 1 large zucchini, cut into 1/4 inch thick slices
- 1 tsp minced garlic
- Half a teaspoon of salt
- 1/4 tsp cumin Powder
- 1/8 tsp cardamom powder
- 1/8 tsp oregano flakes
- 1/4 tsp chili powder
- Add additional to garnish 1/2 tsp fresh chopped tarragon
- 1 large tomato, thinly cut
- 1 cup diced orange bell pepper (about 1 large pepper).
The Sauce
- 1 1/2 tbsp olive oil
- 1 tbsp plus 1 tsp of almond meal
- 1 tbsp + 1 tsp coconut flour
- Unsweetened almond milk, 1 cup
- salt/pepper
INSTRUCTIONS
Preheat
Set your oven at 350degF. Brush an 8" x 8" pan with olive.
Cook
Heat up some olive oil in a large skillet and then add the chicken ground. It should be cooked until the color is no longer pink. Add the tomato paste, onion, salt and pepper. Set aside.

In a large bowl, add the zucchini and garlic. Toss the mixture with the rest of the olive oil. Add the spices to a small bowl and mix them. Sprinkle the spice mix over the zucchini, and toss it until the mixture is evenly coated.
Arrange & Bake
Spread the zucchini evenly in the bottom pan. It's okay if some overlap. Sprinkle with fresh tarragon. Spread the chicken over the zucchini, and pack it well. Over the mixture of chicken, place the tomato slices. On top of the tomato, evenly spread the diced pepper. Cover the tomato with foil and bake it for 15 minutes.
Make Sauce
While the casserole bakes, add the olive to a large saucepan on medium heat. Add the coconut flour and almond meal, and cook until the coconut flour absorbs the oil. Pour the almond milk in and bring it to a rolling boil while stirring continuously. Reduce the heat once it reaches a boil and cook it for 10-11 minutes on a low simmer, stirring frequently until it thickens. Add salt and pepper.
Bake
Spread the sauce evenly on the casserole, and bake it for another 45 minutes. After removing it from the heat, let it cool down for about 10 minutes. Then slice it and top with fresh tarragon.

This meal is not rushed or in a hurry. You can assemble the casserole in the morning, or even a day before baking it. You can assemble the casserole the night prior and bake it after work if you have a busy work day but need to feed your family a hot meal. This is perfect for busy days when you don't have time to spare.
Variations
This dish is a great example of a dish that can be varied because it has so many different ingredients. These are some suggestions. However, some of them may not be suitable for certain diets.
Protein : Use beef, pork, or turkey instead of chicken. You can also use tofu or shredded chicken.
Vegetables - You decide which vegetables you want to add. Add mushrooms, spinach or kale to your meal.
Grains/Legumes If you want a heartier meal, try adding cooked quinoa or brown rice. This will increase the fiber content and protein.
Cheese Sprinkle grated Parmesan or cheddar cheese over the casserole during its final few minutes of baking.
Sauce If you do not want to use the almond milk-based sauce, then you can substitute it with marinara or tomato sauce.

Since I haven't frozen it, I can't say for certain. It would seem to me that it is best to cook the food first, but I cannot be sure.
You can also add a pinch of cayenne or more chili powder. You can also sauté some jalapenos with the bell peppers and onions. You can offer red pepper flakes to your guests before serving the casserole so they can decide how spicy it is.
How to store Dairy Free Paleo Casserole with Chicken
Let the casserole cool down completely. You may wish to divide the casserole into smaller servings at this stage, as this will make it easier for you to serve later. Store the casserole in an airtight container and store it in the refrigerator for up to four days. The casserole can be frozen for up to three months.
